Apricot Chicken
Ingredients
2-3 lbs chicken breasts (thighs, canned chx, pork shops - meat of choice)
1 11ounce jar of apricot preserves, or preserves of your choice
1 tsp dried minced onion flakes
1 Tbsp dijon mustard
1 Tbsp soy sauce or coconut aminos
1/4 tsp ground ginger
1/4 to 1/2 tsp red chili flakes

Directions
Use a 4-6 qt crock pot. Place the meat into you slow cooker.
In a mixing bowl, combine the rest of the ingredients to make a sauce and pour over the chicken evenly.
Cover and cook on low for 6-8 hours, or high for 4-6 hours. If your chicken isn’t frozen, will cook faster. Serve with rice and veggies.
