Split Pea Soup
Ingredients
1 onion, chopped
3 stalks celery, chopped
2 carrots, chopped
1 clove garlic, minced
4 c chicken broth or stock
2 c water
1 16oz bad dried split peas, picked over and rinsed
2 bay leaves
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1/2 # ham, cubed (ham hock would work)
Fresh parsley, chopped for garnish
Prep
Directions
Add all the ingredients except for the fresh parsley to the crockpot and stir together.
Cook on low heat for 7 to 8 hours or high for five hours.
Serve soup hot garnished with fresh chopped parsley.
The soup will thicken as it cools; if you wanna thin it out just add additional water.
Note: This soup freezes beautifully. Stored in an airtight container for up to three months in the freezer.
