Split Pea Soup

Ingredients

  • 1 onion, chopped

  • 3 stalks celery, chopped

  • 2 carrots, chopped

  • 1 clove garlic, minced

  • 4 c chicken broth or stock

  • 2 c water

  • 1 16oz bad dried split peas, picked over and rinsed

  • 2 bay leaves

  • 1/2 tsp dried thyme

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 # ham, cubed (ham hock would work)

  • Fresh parsley, chopped for garnish

Prep

Directions

  1. Add all the ingredients except for the fresh parsley to the crockpot and stir together.

  2. Cook on low heat for 7 to 8 hours or high for five hours.

  3. Serve soup hot garnished with fresh chopped parsley.

  4. The soup will thicken as it cools; if you wanna thin it out just add additional water.

Note: This soup freezes beautifully. Stored in an airtight container for up to three months in the freezer.
