Trish Peach Cobbler

Ingredients

  • peaches, approx. 8 (4 cups)

  • 1 stick of butter (I made Dairy Free using same amount coconut oil)

  • 2 cups granulated sugar

  • Pie Crust: suggest doubling, I do!

  • 1 cup GF flour

  • 1/2 tsp salt

  • 1/2 c + 1 Tbsp shortening (I used coconut oil for Dairy Free)

  • 2 Tbsp cold water

Prep

Preheat oven to 450.

Directions

  1. Peel peaches, cut to make 4 cups. Put in sauce pan and cover with water. Add 1 stick of butter (I used coconut oil for DF) and 2 c sugar. Boil; Keep juicy.

  2. Mix Pie crust ingredients together, roll out to desired thickness.

  3. Pour into baking dish and top with crust.

  4. Bake at 450 F until brown.
