Chicken and Sausage Jambalaya

Ingredients

  • 1 onion, chopped

  • 3 celery ribs, chopped

  • 1 green bell pepper, chopped

  • 1 red bell pepper, chopped

  • 12 oz slices andouille sausage

  • 1 # chicken breast, bite size chunks

  • 2 Tbsp Cajun seasoning

  • 3 garlic cloves, minced

  • 28 oz can crusted tomatoes

  • 1 Tbsp worcestershire sauce

  • 2 bay leaves

  • 1 tsp oregano

  • 1 tsp smoked paprika

  • salt and pepper to taste

  • 1 tsp thyme

  • 2 c chicken broth

  • 1 1/2 c rice

Prep

Directions

Combine all ingredients in slow cooker except salt, pepper, and rice. Cook on high 3-4 hours. Salt and pepper to taste. Stir in rice, cover and cook on high approximately 30 minutes. Add water or broth as needed once rice soaks up liquid. Remove bay leaves, serve.
