Snickerdoodle Pumpkin Bread

Ingredients

  • 1+3/4 Cups flour

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/2 tsp ground ginger

  • 1/2 tsp salt

  • 1 c pumpkin puree

  • 1 c granulated sugar

  • 1/2 c brown sugar

  • 2 large eggs

  • 1/2 c oil

  • 1 tsp vanilla

  • For Cinnamon Topping:

  • 1/4 c granulated sugar

  • 1 Tbsp ground cinnamon

Prep

Preheat oven to 350. Grease a loaf pan.

Directions

  1. In a loaf pan, whisk together the flour, baking soda, cinnamon, nutmeg, ginger and salt.

  2. In another bowl, beat the pumpkin puree, granulated sugar, brown sugar, eggs, oil and vanilla until smooth.

  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  4. Pour the batter into the prepared pan. Mix the cinnamon-sugar topping and sprinkle it evenly over the batter. Or play around and layer the sugar cinnamon topping, or swirl, Have fun with it.

  5. Bake until tester comes clean, about 50-60 minutes,
